Build a usable equipment inventory

Record the make, model, identification number if available, position in the room, and the event history relevant to each affected item. Keep manufacturer information and existing maintenance records with the list. Note which equipment connects to fixed utilities or affects another part of the operation.

Ask for equipment-specific findings

Discuss the assessment with the appropriate equipment or utility specialist. Ask which work is included, which components need further review, and what evidence is provided when the work is complete. Avoid treating a general building report as a substitute for that equipment-specific review.

Coordinate the kitchen's return to use

Bring the equipment findings into the overall handover plan. Record any restrictions, follow-up tasks, or changes in the kitchen's operating configuration. The operator should be able to identify who assessed each system and where the resulting records are held.

Preparing a temporary kitchen lease brief

A temporary kitchen lease needs an operating brief as well as a period of use. List preparation, washing, storage, and staff access needs; ask the provider to explain the equipment and site requirements. Confirm charges and arrangements for extending or changing the agreement with that provider.
